He comes from France where his family has been making award winning wines and sparkling wine for generations dating back over 400 years! He is a true master of his trade! He specializes in the oldest and traditional ways of making wines and New York State Champagne. At Chateau Renissance Wine Cellers we still use, "Methode Champenoise." Chateau Renaissance Wine Cellars is located at the Southern tip of Keuka Lake near the Village of Hammondsport, NY. The winemaker, Patrice DeMay, migrated to the U.S.A. with his family from France in the 1970's. In Vouvray, France, his family ran the DeMay-Gremy Wine Cellars where many of Chateau Renaissance wine making techniques and traditions came from. His family then started DeMay Wine Cellars in Hammondsport.
Chateau Renaissance Wine Cellars specializes in bottle fermented New York State champagne, made one bottle at a time, using a 400 yr old recipe from the former DeMay winery in the Loire Valley of France. This traditional style of wine sparkle is known as "Method Champenoise." Known to make the finest wine sparkles in the world!
